My kids love tuna salad sandwiches and they like certain vegetables, but infusing a tuna salad just makes it a double whammy.I also prefer flaked tuna in water (not oil) and those that have a high Omega-3 content. Omega-3, vegetables, herbs... trifecta!The ingredients are:
1handfulparsley leaves with thin stemsfinely chopped
1handfulcilantro leaves with thin stems, finely choppedfinely chopped
1eashallot finely chopped - substitute with small onion as an option
salt & pepper to taste
juice of one lime
½cupmayonnaiseadd more if needed
2ea small kosher dill picklesfinely chopped (optional)
Instructions
The rest is pretty simple! Mix all the ingredients in a large bowl.Add the mayonnaise gradually and taste until it is to your liking. Some like more, some less. We prefer it with just enough mayo to cover the ingredients lightly.Enjoy on its own or with your favourite bread or crostini.
