Loaded Tuna Salad

Loaded Tuna Salad

Loaded Tuna Salad

J.N.
Yes, loaded with goodness of herbs and vegetables!
My kids love tuna salad sandwiches and they like certain vegetables, but infusing a tuna salad just makes it a double whammy.
I also prefer flaked tuna in water (not oil) and those that have a high Omega-3 content.
Omega-3, vegetables, herbs... trifecta!

  • 2 stalks medium stalks of celery finely chopped
  • 1 ea medium carrot peeled and grated
  • 1 ea medium parsnip peeled and grated
  • 4 ea radishes ,head and tail cut off, finely chopped
  • 2 ea cauliflower florets finely chopped
  • 2 ea green onions finely chopped
  • 1 handful parsley leaves with thin stems finely chopped
  • 1 handful cilantro leaves with thin stems, finely chopped finely chopped
  • 1 ea shallot finely chopped - substitute with small onion as an option
  • salt & pepper to taste
  • juice of one lime
  • ½ cup mayonnaise add more if needed
  • 2 ea  small kosher dill pickles finely chopped (optional)

Instructions

  • The rest is pretty simple! Mix all the ingredients in a large bowl.
Add the mayonnaise gradually and taste until it is to your liking. Some like more, some less. We prefer it with just enough mayo to cover the ingredients lightly.
Enjoy on its own or with your favourite bread or crostini.
